Steps

  1. Roast the nuts

Chop the almonds, cashews, pista and walnuts. Roast them in the dry kadai on a low flame for 4 minutes until they smell toasty. Tip them out.

  2. Make the base

Pulse the dates and chopped figs in the mixer into a sticky, coarse paste.

  3. Warm it

Heat the ghee in the kadai and cook the paste on a low flame for 3 minutes, pressing and turning, until it comes together.

  4. Mix

Turn off the heat. Mix in the nuts, raisins and cardamom.

  5. Roll

While still warm, grease your palms with a drop of ghee and roll 12 laddus. They firm up as they cool.

Shop tip: If the mix will not hold together, the dates were dry: add 2 more soft dates or a spoon of warm milk and press again.

Questions people ask

How long do dry fruit laddus keep?
About two weeks in an airtight box in a cool place, or a month in the fridge.
Are they good for people with diabetes?
They have no added sugar, but dates and figs are naturally sweet. Treat one laddu as a sweet, not a free snack, and check with your doctor.
Can I give them to children?
Yes, from about two years old. Chop the nuts very fine for young children.
